The author of Luke and Acts specifically mentions Jesus being seen by people who were not disciples, and travelling around doing things for another 40 days. Luke and Acts were written by a hellenistic Greek physician who decided to investigate the whole thing and write down an account based on the best available evidence and witness testimony, and is the most historically minded of the Gospels.
In the other Gospels, it often isn't clear when the post resurrection Jesus is just meeting with the core 11 surviving disciples, vs teaching a larger group of followers.
In 1 Corinthians, when Paul mentions the resurrected Jesus being seen by various groups including over 500 people at one point, he is repeating a creed or the teachings being taught by the earliest Christians immediately after the crucifixion, even though the letter itself probably was written about 20 years later. But still soon enough that there would have been many living eyewitnesses to these events.
