Honestly, it is very possible that this person genuinely loves you but has some severe mental health problems. It sounds like something health related happened, there were a lot of miscommunications, and he freaks out when he thinks things are over. If he wasn't interested and was just aloof about the whole thing he wouldn't keep trying to get you to stay, plus the extreme reactions and poor communication hints at some sort of mental health thing going on. It might have worked if he got therapy.
