One of the secrets to a good toastie is cheese type. Everyone knows cheddar is great all round but really not the best one for a toastie, a trick that people don't know is that you can use a slice of cheap plastic burger cheese to soften it up. This makes it more gooey and stretchy which is what you really want. Same trick can also be used with red Leicester if you're so inclined.
So what we do is we start with a slice of edam, then some double Gloucester, THEN the burger cheese, and then some red Leicester to finish it off.
You want to butter the outside of the bread so it toasts up nicely, you don't want it drying out.
Now i used a panini press this time, but other decent options are a frying pan and the air fryer. No pictures, I already gobbled the lot.
