When the Qur'an says 'Let the people of the Gospel judge by what Allah has revealed therein' (5:47), it's not endorsing every verse of the Greek manuscripts; it's telling Christians to live by the genuine truth from God that still survives within their tradition - the moral and monotheistic core of Jesus's teaching.
And when it says 'None can alter His words' (6:115), that refers to God's eternal decree and His ability to send new revelation - not to the impossibility of people distorting texts. The Qur'an itself says earlier communities 'twisted words from their proper places'.
So there's no contradiction:
God's eternal words can't be altered.
Humans can still mis-transmit them.
