I see. I know some caramels don't contribute much to flavor but do also work as emulsifiers. They use some of those for soft drinks actually. Generally any kind of cola that you see uses them to emulsify flavoring oils into the drink and it's what gives them that dark brown/black color. I wonder if you could do the same with the dulce de leche now. I'd definitely want to try it, especially because the lemon cheese cake recipe that I remember from my grandma had to use alcohol to impregnate it with the lemon flavor whilst the alcohol would evaporate. Not needing to use alcohol could allow for a greater concentration of flavor. Could even get more creative!
