yeah they can be intimidating at first, but lots of packs have quest books to guide you through the basics all the way to the more advanced setups
just stay away from gregtech and anything else will be nice enough, kek
you could try skyfactory 4 or 5 if you want, prominence also may be rpg based but it has some of those tech mods
same for steampunk but i think it focuses more on create (straightforward, pretty, but simple since it only gives you building blocks)

i used to be very interested in those but more so the strategic aspects, military science
