poekemon is pretty easy and still somehow basically the most popular...the newer games (sun/moon and after) are kind of bad, but if youve never played pogeymon before i would start with fire red/leaf green and then emerald.
theres online emulators now like https://gbapokemon.com/ but its a little simpler to download an emulator yourself for pc or phone and then search up a rom for the game you want to play.
