Why would an evolved monkey have all the senses needed to perceive the whole universe?
There's no reason it should.
Just like an ant can't perceive the way we do, we can't perceive the way a higher being could and "see" dark matter.
Think of it this way, for a godlike being (compared to us) dark matter wouldn't be dark matter, but something it "sees" and understands.
