The difference between a roguelike and a roguelite basically. Roguelites keep some hard progress or permanent upgrades. In this case the story, relationships and some checkmarks will stay between each run. It is not a reset so much as another attempt at a trial. Being in the Underworld and being functionally immortal helps with that.

BG3 doesn't have a mechanic where your party members romance other characters if you don't pick them.
Pillars 2 only has the party members romance each other if you encourage them or follow their questline there.
Nemesis isn't with Artemis.
