5 and Tactics are really good for party customization. If you like Tactics, check out Tactics Advance and Tactics Advance 2. FF4 is very basic and simple, fun for one playthrough. 6,7,8 and 10 are good stories and gameplay. 9 is atmospheric and soulful but the battles are sloooog because of over half a minute intro, outro and slooooow animations
