Invest in invisibility potions in order to offset any trouble with stealth, but for the love of god keep leveling it up. The final perk of the stealth skill tree "shadow warrior" is my favorite perk in the entire game. It's supposed to give you only a few moments of invisibility, but it's broken (at least in the vanilla xbox 360 version) so you can continually spam the sneak button and move as a mass of dark mist around enemies who can't see you or attack you. If you time it right and strike an alerted enemy from the front while shadow form is active, you'll teleport behind them to trigger an assassination kill. It looks cool as fuck, like I dissipated into mist and re-assembled behind them and feeds well into my vampire roleplay.
Just practice sneak attacks on your horse and heal it afterwards to level up quickly. I'd say a sneak archer is by far the funnest way to play the game. Also, make sure you get all the "throw voice" shouts and you should be pretty set up.
