Executor seemed so cool to me when it was shown off but after seeing how most of the bosses are beasts or use an enrmous amount of magic and AoE to fight then it does lose much of the appeal, what feels most satisfying to parry (and more intuitive too) are the bosses who just attack you with a sword in a normal way.
Sekiro was built around this, and even the beast enemies in Sekiro like the guardian ape had movesets that were easy enough to understand for parrying and dodging well (except the bull, the bull can go fuck itself).
Sadly this ain't the case with ER, ER is too focused on huge magic explosions
