Cuz it makes the CPU run hot as fuck - it's extremely inefficient to push the CPU this hard because it's completely outside of the power/performance ideal. There's also risk that it's not actually perfectly stable because it is being pushed to the absolute limits that the cooling allows.
One thing I noticed with AI OC is that if it actually does hit the thermal limit of 95C, then the performance I don't even get any performance benefit despite using 100 more W.
Imagine this, CPU performed same at 4.8 and 5.4GHz in 7zip benchmark. Nasty. Power usage was totally different though.
