None of what you said gave any thematic importance to Rudy being the Knight, it's just "because it's logical." When considering that something is logical, ot must also be thematically important to the story to actually be plausible, imo. This is why Dess is the prevailing theory for a good reason

Stuff like this that strengthen the narrative, not justify it.

The Knight is Dess, but not Dess. It's Dess but she's lost-lost her body, lost her mind, lost herself. It may be Dess in most respect, but it's still not her. There's also the Dess in the code, who is lost.
Kris's quest is to find her, which is to bring her back from what the Knight is, whether that be the endgame of the normal route, or the shadow crystal side quest.
