anyway I don't get this "I want to taste the ingredients not the spices" cope. if you put nutmeg in a cream sauce are you covering up the taste of the ingredients with the spice? is the paprika in goulash an ingredient or is it a spice? a whole jalapeno is surely an ingredient, but when does it become a spice? when you smoke it to turn it into a chipotle? when you grind it up into a powder?
