Of course, though if you're this committed you really should start your 2nd run from the scratch. Otherwise the time you save by not having to play through the entire Act might be more valuable. My go-to method is to play games normally and whenever a decision or dialogue pops up whatever option I settle with (which is often motivated by role-playing instead of utility) remain my "canon" 9 times out of 10. But since I'm often torn between two options or find others that piqued my interest I usually reload and experience those too. Yes, it takes some extra time but the reward (most of the time extra info about the story/chars/lore and thus deeper understanding of what's going on) is usually well-worth it.
