He wins because he very thoroughly cursed the living dogshit out of the entirety of Hyrule in a bid to get the spiritual stones while feigning fealty to the Royal Family to keep humans from suspecting him (doesn't care about the non-human races, they're all being taken care of), either the curses are lifted and somebody is collecting the stones that he can then kill and take them from, or the curses aren't lifted and everything that isn't human in Hyrule dies and he can snag the stones on his own time
The actual stroke of luck there is the Ocarina of Time and giving it to Link, something he didn't know about before following Link into the Temple of Time
Zelda's own plan was to get the Master Sword to fight back against Ganondorf, and go further back into the Sacred Realm if need ABSOLUTELY be (ideally Link will be capable of killing him with the Master Sword)
The Master Sword kidnapped Link because he wasn't actually old enough to wield it yet and it decides things on its own, not for any readily apparent rhyme or reason (funny enough this would imply Wind Waker's Link is somewhere around 17-18 despite his obvious youth, it's the Hero of Time's story he's riffing on with Outset Island's tradition)
Going back is pointless outside of manipulating time in his own favor or solving half the Spirit Temple, Ganondorf has already broken the Triforce and Link, Zelda and Ganondorf have their own respective pieces, there's nothing more to really do in the past and the Master Sword won't allow him to age naturally or solve the problem before it's predestined (complete headcanon but Zelda might also be meddling in some way as the implied Sage of Time)
