I think personality plays a huge part in this. A lot of "I can solo everything" OCs come across as very obnoxious shitters whose heads are up their asses. Gerson in contrast is jovial, humorous, and brimming with experience and wisdom which he imparts on the heroes to help them become their best selves. It also helps that he's established and foreshadowed well ahead of his actual encounters.
