Because people think Destroyah is a fitting conclusion to any Godzilla story. The problem is the Monsterverse did not start out with the oxygen destroyer being employed by Serizawa. It started with Godzilla bringing balance by killing two ancient superspecies. The emotional weight and gravity just isn't there. Destroyah came at the end of a long arc of Godzilla becoming periodically stronger. If it happened now it would just feel like a cheap gimmick because the MV incarnation isn't seen as some colossal threat to mankind.
I think when the MV ends it should be either Bagan or a new, alpha Ghidorah that makes the previous one look like a chump. But Supernova will probably be a space villain anyways so that rules out Ghidorah. Bagan would be the next best thing because he actually has Godzilla's DNA in him. They could easily say his Godzilla genes compel him to bring balance...by wiping out all life to start over.
