You don't need that large set-piece back to back, constant massive open fields. Just a few, or even only one. You just got to build it properly. Give a beautiful soundtrack, set the atmosphere right, have an NPC on a horseback beside you talking about something, or even have something going on, like animals feeding, playing around, have other NPCs coming in from the other direction or a carriage stopped by to the side with an NPC to talk to or perhaps buy stuff from. Put a hidden cave somewhere in there.
Don't just leave a massive empty field with nothing in, just like Elden Ring does. Elden Ring has one of the worst open worlds I've ever played.
