The answer is in the question. Soul is the immaterial essence of something, therefore in media something that is "soulful" is something that was made with a vision from it's creators, it has abstract properties that comes from the imagination used by the creators to make it, which can be felt by those who use said media, as it appeals to their own soul by stimulating their imagination, inspiring them, ect. which can be felt in various and often all parts of the media, whether the scenario, the artstyle, music, ect.
Souless media in comparaison has none of this.
The talk about soul vs souless in creative endeavors in fact might easily connect to the NPC theory and large amount of people lacking inner monologue, visualisation and inner experience in general as they would be more likely to make soulless creations
