Because people crave convenience and that's not what Linux is about. Maybe once SteamOS gets broader support, people's gaming rigs will use that but only if it's seen as the easiest "gaming setup".
Knowing what the control panel is and what settings can be changed is considered "knowing a lot about computers" to the average person.
