I'd recommend Llylgamyn Saga on PS1. Out of the old console ports it has the balance closest to the Apple ][ original, and the option to use auto-map if you so choose. There's some visual options you can play with in the options and English for everything but spell descriptions as those were added with that port. The text in English is otherwise pulled from the original release. There's also New Age of Llylgamyn on PS1 too. It has 4 and 5 in it, and lets you move your characters from 3 over to 5 pretty seemlessly. They're just super solid games with solid mechanics right out of the gate, which 5 adds on in some fun ways. Out of the original 3 games, I think Legacy of Llylgamyn (3) has the best designed campaign overall, outside of the initial grind being rough.
If you like those, I would also recommend the Wizardry Gaiden series as they continue from where 5 left off mechanically while also being a bit easier (still engaging games though).
