If you're just an average user nVidia will work fine. Look at steam hardware survey, nVidia is the most popular GPU vendor on Linux if you exclude SteamOS.

In most cases software on Linux is cross-compatible with other Linux distributions. Just like it doesn't matter which Android ROM you're using when installing an apk. That is, unless something specifically targets one distribution. It's possible that SteamOS-specific scripts are only usable on SteamOS, but it doesn't seem to be the case in your example since it's saying "Linux/SteamOS" and implies it should work on any distro.
