Dealing with hordes imo is the most weird thing about about these games. Pick a basic weapon like a sword. Find an attack that sweeps from side to side. Do it and move your camera alongside the movement of an attack. So if your hammer hits from left to right, move camera to the right for a bit, so it'll cleave a bit more targets. Some weapons cleave better then others and it's faster to get to that attack in a combo.
After doing an attack dodge to either side. Do another attack and dodge again. If there are special enemies in the crowd keep an eye on them. Hold block and press attack from time to time, it'll push enemies and interrupt them. You have dealt with the horde now. Every other mechanic comes naturally as you explore classes, weapons combos etc.
