There was a video some time ago delving into the art direction side of things, but nothing too technical. Which is a shame because this game completely mogs its inspiration (nu-Zelda) and most copycats, just because Genshin team has a deeper understanding on where to use low-contrast textures and spyro-like palettes giving everything a dreamy pastel look no matter how trash the hardware running it is, while BotW tried to be more realistic with awfully low-res normal maps and drab palettes all around, and Genshin copycats go either full UE5 soft shadowy look or they mess up palette and color distribution.
