Every quest, or just the ones that are considered for Loremaster/Sojourner achievements? Because there's also profession quests, class specific quests, allied race quests, legendary weapon quests etc. Also, am I allowed to hit max level and exit Chromie time to do the non-scaled/trivial versions of quests? If it's just Loremaster and I can be max level for msot of it then it's probably doable. The later expansion campaigns can be smashed out in 5-8 hours assuming you're using an addon to skip all the text and dragonriding everywhere. TBC, Wrath and Cata take a bit longer.
