First of all, always keep one rainbow card in your inventory unless you REALLY need it. Having one means that if someone dies, you can just run over their loot pile spamming the pickup button and always get their level cards, because they just go into the existing stack. Otherwise, even if you have room in your inventory, you risk accidentally filling it up with the enemy's dropped potions first and then trying to drop stuff to make more room for the level cards mid-fight and it's just a huge hassle.
As for why I keep a bunch, it's to ensure that ability cards don't go to waste levels-wise. This is especially the case for non-Supports, who get way less value out of their class's ability cards than Supports can.
For example, let's say you're playing AfO and you find a bunch of rainbows. You instantly max beta, but is there a reason to do it so soon? You're not in a fight or anything.
10 seconds later, you come across two purple beta cards from red boxes. But you've already maxed your beta, so those basically just go in the trash.
If you had waited to use the rainbow cards, you would've been able to put those two purple cards into your beta levels, resulting in you having two more rainbow cards to devote to your other abilities/leveling Support cards/etc.
