Get some tripe soup.
The most common one is Spanish menudo, if you are lucky you can find some sort of asian dish with it.
But tripe is loaded with natural vitamin B, selenium ,zinc, iron, niacin, and the hominey has Magnesium if you do get menudo.
the chili base also has a lot of anti oxidants.
not to mention its a lot of protein albeit with a bit more fat content then other meats.
