You're probably misinterpreted the studies or reading ones that don't replicate and should be retracted. The best studies I'm aware of are all about intermittent fasting, not fasting in general, and even then the benefits are marginal and most pronounced in mice, not humans. For intermittent fasting, the most popular form is you give yourself an 8 hour window and eat your normal 2000+ calories during that window and nothing but water outside. Alternatives include 2 non-consecutive 24h days per week of eating very little, <500 calories.
Starving yourself continuously does nothing positive.
