>It depends, I would say yes I regret not learning about it and for years watching a shit ton of shows in 720p
The human eye can't see in more than 720p.
Really though, don't feel too bad about it, most shows weren't even made in higher than 720p and were just upscaled. To this day I still watch all my animu in 720p (because my computer is perpetually short of HD space, but still...)
As for higher quality rips, that's only really relevant to a degree when you're attempting to download popular old stuff.
Most stuff I'm familiar with is either:
A) Current streaming shows which no one really has the time/care to fan translate it and they just use crunchyroll rips (bad quality too), or
B) The older shows are niche enough to only have one or few groups translating them and they're often of equal quality just stylistic changes.
As always, you would be served with just learning the language and realize that the experience doesn't differ noticeably regardless of the quality of the encode unless it's like coffee stains on film tier.
For recommendations obviously just browse /a/.
Random ones though off the top of my head:
The Melancholy of Haruhi Suzumiya
Lucky Star
Seto no Hanayome (My bride is a mermaid)
Violet Evergarden
Asobi Asobase
Ichigo Marshimaru
Daily Lives of Highschool Boys
Wasteful days of Highschool Girls
Teekyuu
Hinamatsuri
Code Geass
Guilty Crown
ID: Invaded
Cross Ange
Crest of the Stars (and it's sequel / same series, Banner of the Stars)
Familiar of Zero
Shakugan no Shana
Toradora
Golden Time
I could go on, but you get the idea. Just find a random anime rec chart and go wild.
My personal recommendations, though, would be to start at the 2000s era. The first three were made in roughly 2006 iirc.
One final note: my all time favorite movie, with no exception, is "The Disappearance of Haruhi Suzumiya", set directly after the events of season 2. So do not forget it if you watch and enjoy the series.
Enjoy Endless Eight
