People flip the sign of time in EFE solutions because time reversal is one of the symmetries of the Poincare group

There’s a whole different notion of “thermodynamic time” (most often taken to be the inverse of temperature) that’s unrelated to the “geometric” time of general relativity. People in the GR community have tons of debates about whether they’re actually related or not, so your question is an open one.
