Depends what stage of civilization to get your modern humans from. Currently weโ€™re in the decline stage, lots of poor genetics cause weaker immune systems among other troubles.

Evolution has not occurred along the line you presume. Either the adaptation was never possible, or the generalist nature of the diet and poor nutrition associated with caloric focus is insufficient to provoke the stated response.
