Less cheeky answer:
What do you bring to the company? Number crunching is usually done by people who specialized in the kind of math that meets their application. When you specialize to this level in a broad field like math, your best bet is to do research in the field and discover new math. (I'm not denigrating people who choose to do that, btw).
If you wanted a job where someone pays you to crunch numbers all day, you should have gotten an engineering degree.

ml/ai is linear algebra with algorithms and data structures aka comp sci. shouldn't be too difficult. if you can get a math phd, then you can do it.

The only reason anyone with a math PhD is unemployed is by choice. The average math PhD student could easily pick up any grad engineering/CS/finance/etc. job and exceed everyone else in the same position.
