what's the pic rel equivalent for probability and stats?
I realized that I owe >65% of my combinatoric skills to this book and I was wondering if there are others up to its level in other areas.

Feller's book on Probability is similar. You can't really have a similar book for Statistics since it's more of a conceptual and theoretical subject; not focused on solving problems.

I don’t consider them equivalent to Lovasz’s book.

I think you can make something similar but less social science/bio-focus. Slowly introducing statistics concept while manipulating some public data you can find on the internet.
Like make a text with moore method/socratic method/inquiry-based-learning/theorems through problems style.
