Why did evolution end up this way for us? Cats and dogs don’t care about height (length) or facial structure. A 20 lb male dog with a smushed in face can impregnate a 50 lb beautiful Golden Retriever female. What are we missing here?

Evolution didn't, "we" did. Smart people in the past invented technology that made most traits natural selection would select for obsolete. Now one's survival prospects do not matter, only perceived virility and physical appearance do.
