Since space is almost completely empty, could I build a vehicle that slowly but infinitely accelerates in order to eventually reach infinite velocity? Assuming I don't randomly crash into a star.

What if I install ten inch solid concrete armor around the vehicle? Would that protect it?

Almost empty is not the same as empty. The chance to hit something would increase with your velocity. If there is any chance for space travel at all it is some kind warp drive.

It will stop eventually something will catch it or it will crash into something. No such thing as infinite velocity.
