I can't say if the scenes existence is justified or not since I haven't seen the film or know the context beyond it + the trailers so I'll digress.

Superman isn't a character that can afford to be emotionally unstable, there's a reason he's typically written to be level headed. There are exceptions obviously but those usually involve versions of Superman which drastically deviate from the norm.
I'm not sure what makes one version less valid than another. He's emotionally unstable plenty of times in comics. I wouldn't even say it's out of the norm for him to freak out when someone he cares about is in danger. I can post countless scans of him flipping his shit like pic related. There's a famous one going around right now from Byrne's run that's more or less the scene in the OP where he breaks into Luthor's office having a tantrum while Luthor is smug and plays dumb.
