Don't think so, or at least not unless the creator of the specific gamemode you're playing allows it.
Remember the mario maker event we had way back, which allowed users to create their own levels, including selecting which characters the player was allowed to use? I imagine it'd be something like that, with you being forced to use the UCG protags if the creator disables Genshin character usage.
