It's more the processing was replaced by partial digestion in their body. Never tried elephant dung only luwak coffee (palm civet dung) but honestly it's not worth it unless you possess extremely sensitive tongue.
Brazilian/Colombian/Indonesian 15usd/kg beans is good enough for me than paying 20 burger bucks per cup for palm civet dung coffee but if tourists wish to burn their money away no govt would say no to that.
