Undertale centers around "Determination" specifically as a major theme for you as the player and a human child that's fallen in a world of monsters out to kill them. But Sonic is not Frisk, Chara, Kris or YOU.

Deku and Simon are the ones directly comparable to the human in Undertale breaking through insurmountable odds through sheer force of will, all while starting out as just a regular human child. But Sonic isn't a "regular human", he is the insurmountable idea itself. A larger than life conceptual ideal, a "paragon", a living symbol incarnate.
But what that then means is that "Sonic" is the ideal standard that the "regular human" strives to emulate. If Spider-Man is knocked down, he'll always get back up. But what pushes him to do so is that idea of someone like Sonic, who embodies that "never give up" feeling. MHA is the story about Deku becoming the greatest hero in the world, but it's All Might who serves as that image of a hero that Deku is emulating. The story would not work without that "symbol" existing as the standard he's aiming for, and then has to surpass.
That "symbol" is what Sonic, as a character, is. A lot of these complains you guys have right now, is criticizing Sonic for being that symbol and framing it like he's never had to struggle or work hard ever. Which is simply not true. But the point always is that no matter what situation Sonic is in, he's always able to break through and succeed because he's "just that cool". That doesn't mean he's not still struggling to get there, he just has the right mindset to overcome it and keep his cool, to make it seem like no problem even if it really was.
It's meant to be inspiring. Meaning, it's meant to serve as an example. If you're in a tough situation, "Sonic" represents what you'd push yourself to be like to get through it. Whatever it may be.
