SAUSAGES AND BEANS LUCANA STYLE
Ingredients
4 fresh pork sausages
Half a shallot head
400 ml tomato puree
500 g boiled cannellini beans
Half a glass of Aglianico red wine
Extra virgin olive oil to taste
Hot chili pepper powder
Preparation
Start by finely chopping the shallot and brown it in a high-sided saucepan with a couple of tablespoons of extra virgin olive oil. Now add the sausages, after having lightly pierced them with a fork, and let them flavor over medium heat, turning them often so that they brown on all sides.
Pour in the red wine and let it evaporate completely. At this point add the tomato puree, wait for it to boil again, then add a pinch of salt and mix well.
Now it's time to add the beans, well drained from the cooking water. Lower the heat, cover with a lid and let it cook gently for about thirty minutes. Check the cooking liquid every now and then: if it seems to be drying out too much, feel free to add a drop of hot water.
When everything is nice and blended and fragrant, serve the sausages and beans piping hot, completing each dish with a pinch of chili powder, for that extra touch that warms. Enjoy your meal!
