MIT spent some time developing a concept for a counterpressure suit that alllowed for add-onn armor to protect the suit from puncturees.
Of course this was just for protection from scratches, pointy rocks, etc. on Moon or Mars, but in principle you could expand on this and attach a plate carrier.
