They can provide an interesting backdrop or a framework for stages, characters, and all that. I mean that's really the extent of it, for the most part, expanding on the very things the games are centered around, their characters. Old Mortal Kombat was relatively extensive though, there was more thought in it, lots of worldbuilding.
