Same reason Drizzy got popular, as well as Hannibal lector eventually becoming the good guy, or Anti-heroes becoming a thing.
People get bored playing it straight.
It's not like this cycle didn't continue with other IPs bringing back how savage orcs are or how evil Drow are, etc.
