Psychic Spectres is the 'definitive' edition, but there's a bonus dungeon that relies on you having save data from the other 2 games to unlock, and some version exclusives.
Bony Spirits has cool bug yokai
Fleshy Souls has cool frog yokai
I'd personally look them up and make a judgement call, but Psychic Spectres has the most story of the other 2.

If you play one of those versions, you can do a save transfer into Psychic spectres to avoid restarting the game once you get the exclusives.
