Whitebeard and Big Mom are big just because, they're genetic freaks, Big Mom more so than Whitebeard as Whitebeard lacks her nigh-invulnerability. Some people have speculated that Whitebeard is a Buccaneer but I don't buy that, there are plenty of people around his size, many of which are irrelevant, like Brownbeard, Buffalo, Jerry, Pound etc. Big Mom is 100% a normal human as we saw her parents.
Kaido is an Oni, which likely means he's a human who has some Ancient Giant blood.
Also Kaido and Linlin were huge their entire lives, including Linlin in her young adulthood, she just got thinner and then got fat again in old age. Whitebeard got huge as a young adult and then stayed that size.
