I recently discovered how to make shawarma in the oven. Game changer.
Marinate onion powder, garlic powder, paprika, cayenne, tumeric, cardamom, coriander, allspice, cumin, salt pepper, olive oil, vinegar, and Greek yogurt to boneless skinless thighs (pounded). Let marinate for 12-24 hours.
Cut a big onion in half. Drive wood skewers through base to make a spit. Layer thighs. Cap spit with other onion half.
Bake at like 375 for ~90 minutes until center is 165. Broil if char is needed on outside.
