They hack a bunch of this shit (beef+lamb) off the large rotating mass, chop it up with onions and grill it while they assemble a wrap for you. It typically has hot sauce, tzatziki and garlic paste as a base, then whatever veggies n such you want. I go for lettuce, a shitload of peppers and feta cheese. Then they toss the shawarma meat and onions on top, hose that bitch down with tahini and roll it up. It is very good stuff. And the guy who runs the shop is the friendliest dude in the world, which makes the experience that much more pleasant.
