As someone who loves spicy food, the reason it's a stereotype is because a lot of other cultures put heavier spices in their food (heavier being relative cus CN food is pretty weaksauce) while Europeans and white Americans tend to not have that as part of their baseline diet so they don't build up a tolerance to it over the years.
I fucking love it though.
